You don’t have to be a millionaire to enjoy these tasty treats from Scotland!

 

Millionaires Shortbread

 

Shortbread Base:

½ cup butter

¼ cup white sugar

1¼ cups flour

Mix well and press into a 9x9 inch pan

Bake at 350F for 20 minutes

Let cool

 

Caramel:

½ cup brown sugar

½ cup butter

2 tablespoons dark corn syrup (or golden syrup)

1 teaspoon vanilla extract

½ cup sweetened condensed milk

Pinch of salt

Combine the ingredients in a saucepan

Bring to a boil until mixture dissolves

Boil (whisk) for 5 minutes until caramel thickens

Remove from the heat

Pour over the shortbread base

Put in the fridge or set aside until it sets

 

Chocolate:

12 ounce packet of semi-sweet chocolate chips

2 teaspoons butter

1 ounce milk

Melt over low heat until they are soft

Pour over the caramel

Put in the fridge until the chocolate sets, at least one hour

 

Remove from fridge and cut into squares

Enjoy with tea, coffee or on their own!
